I would also recommend Kenny Brown's. He did a great job rebuilding my engine to rude health a few years ago. He did mine in 2018 (IIRC) and it's been great ever since. I am sure if you did have any issues after the work, he would sort you out.

Many thanks for the suggestions; I went with Dominic’s first option which was absolutely brilliant, had a great evening for it and once I was past the Queensferry crossing the roads were pretty empty until I got to Callander.
