My girlfriend recently bought another car, she transferred the insurance and her plate onto the new car, the old car is meanwhile on my drive, still taxed but not insured. Is she then committing an offence by not having insurance ? should she sorn the car to be correct and avoid a potential fine ?

Yes, immediately SORN and keep off public road until insured and taxed once more.

Your other option is to insure the vehicle. Depending on your status that might not be so expensive and gives you the flexibility to drive it from A to B to sell it, etc., without worrying about the long arm of the bureaucrat.
