But I might actually take my name off anyway if you guys are saying this wouldn't be covered by trackday insurance. Why wouldn't it be covered?

It is unlikely to be covered by trackday insurance as it isn't actually a proper track, it's an airfield type thing. Most trackday insurers will only cover you for an MSA approved venue.
Oh and I'll be up for a day here too... insured or not!!

I am pretty sure that you'd get insurance for this quite easily through:-
Competition Car Insurance
THB Egger Lawson
(0115) 941 5255
Talk to Chris Yemm or his colleague.
They insured me for tracks such as Kames and Boyndie for about £90. (NB. CTR not Elise)
Given the cheapness of the full day trackday you are getting, paying a bit more on insurance is of less consequence.....
