What gauges do the S1 & S2 have as standard e.g. Oil Temp, Pressure, Water?

No.

Gauges - none - the stack show speed, revs, water temp, fuel level plus warning lamps for oil pressure, brake fluid level, etc.

Some people add oil temp gauges - there's a kit floating about I think ...

Generally you don't want to know, the water temp gauge will keep you on your toes anyway (K series cars only!)

Lots of people add extra gauges, especially for oil temp. Oil temp gauge really should be standard in a track biased car I reckon. Here are mine in the Exige

Those gauges look great sitting there!

Without a baffled sump do you not run the risk of oil starvation with slicks on track?

In high G corners it will obviously be a problem eventually - depends on how long the corner is and what the G is.

Lotus sell an AccuSump kit or some such thing I think and it may even be standard on the S/C cars. In the long run I think dry sump makes more sense that a baffle, because the baffle is just delaying the inevitable and can lead to problems of it's own too.

I guess we're biased, but the answer is obviously yes, buy one

GP catalogue is full of boys toys for the car as well as helmets,gloves, boots, etc., all tastefully modelled by pretty people of both sexes
